Pork Chops Charcuterie Recipe By : Serving Size : 6 Preparation Time: 0:10 Categories : Pork Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 thick pork chops -- about 1" thick Salt and freshly ground pepper 3 tablespoons sweet butter 1/2 cup onion -- fine chop 1 teaspoon black pepper 1/4 cup wine vinegar 2/3 cup diced tomatoes 2 tablespoons tomato purée 8 ounces stock 1/4 teaspoon thyme 1/4 teaspoon tarragon 1 1/2 tablespoons Dijon mustard 2/3 cup thinly sliced gherkins 1 tablespoon parsley, chopped Oven @ 400°F. Sprinkle chops with salt and pepper. Put 1 tablespoon butter in sauté pan and brown over medium heat for 5 minutes each side. Place in oven for 5 minutes. (Check for doneness, an additional 2-3 minutes might be required.) Remove from oven and cover for 5 minutes. While pork chops are in oven, heat another tablespoon butter in saucepan, cook onion for 2 minutes. Add pepper and half of the vinegar, reduce to a film. Add tomatoes, simmer until slightly thickened. Add puree, parsley, thyme, tarragon, stock and salt and pepper to taste. Simmer 10 minutes. Place chops on serving dish. Pour off fat, deglaze pan with remaining vinegar. Add sauce, stir to blend. Add mustard, 1 tablespoon butter and gherkins. Spoon over chops and serve. Start to Finish Time: "0:30"
